Momma's Pumpkin Nut Muffins

This is a great recipe for anyone interested.. I used wheat flour, egg substitute and brown sugar.  All of these can be substituted for the other if they aren't stocked in your cabinets.....

Momma’s Pumpkin Nut Muffins

 

Ingredients:

4 eggs, slightly beaten (egg substitute can be used)

3 ¼ cups brown

2 cups oil (or 1 cup oil, 1 cup applesauce)

2 cups canned pumpkin (1 ½ cans)

4 cups wheat flour

1 ½ tsp salt

2 tsps baking soda

2 tsp cinnamon

1 tsp nutmeg                       

1 tsp ground cloves

¼ tsp allspice

2 cups walnuts, chopped

1 cups raisins


Method:

Combine eggs, 3 cups of sugar, oil and pumpkin. Mix well.  Sift together flour, salt, baking soda 1 ½ tsp cinnamon, nutmeg, cloves, and allspice.  Add to pumpkin mixture along with walnuts and raisins. Combine until just blended.  Pour batter into greased muffin tins. Combine remaining 1/3 cup sugar and ½ tsp cinnamon and sprinkle over top of muffins.  Bake in preheated 350 degree oven for 30 minutes.
